Mixing Instructions: In large pot, add rice & spice packets to 10 cups water. Add a 10 oz. can diced tomatoes (plain or w/green chilies for more spice). Add 3 cups diced, cooked chicken (or turkey). Bring to boil, cover and reduce heat to low. Simmer 30-45 minutes. (Add a handful of tortilla chips for thicker soup and cook until chips are dissolved.)

Ingredients: Rice, dehydrated onion, dextrose, salt, sugar, maltodextrin, onion powder, chicken fat, autolyzed yeast extract, spice, oleoresin, turmeric, disodium inosinate, disodium guanylate, lemon flavor powder, pepper, cilantro, garlic powder, cumin, herbs and spices.

    I made this soup for my husband, my youngest daughter, and myself for dinner one evening and we all had reservations about what it was going to taste like, from the watery look of it. To our surprise, it was delicious and they had seconds. I had quite a bit leftover that I put in the fridge. The next day, I made a chicken in the crock-pot for dinner, and what I had leftover, I shredded and put in the leftover soup in the fridge. I had it for lunch the next day, my husband and I had it for dinner that night, and I still had enough left for lunch the day after that. It makes a lot of soup and it’s a low-fat option to put with a salad. I have ordered several more to have on hand. I am making the gumbo tonight, can’t wait to try it.

    This soup makes so many portions. I add a few cans of corn and pinto beans as well as the chicken and rotel. It is delicious and lasts for several days. A great low-cal easy to throw together meal.
